Miso Butter Banana Bread

A deep, caramelized twist on classic banana bread! Brown butter and burnt miso bring a rich, nutty umami flavor that pairs perfectly with sweet bananas.

Ingredients
Banana Bread Base
2 very ripe bananas (+1 for topping, optional)
120 g (1/2 cup) butter
2 tbsp white miso
100 g (1/2 cup) brown sugar
50 g (1/4 cup) white sugar
2 eggs
1 tbsp vanilla extract
180 g (1 1/2 cups) flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon (optional)
60 g (1/4 cup) yogurt or sour cream
Topping (optional)
1 tbsp brown sugar
A pinch of flaky salt
Recipe
Burn the miso: Cook the miso in a pan over medium heat, stirring constantly, until it darkens and smells caramelized (3-5 min). Set aside.
Make brown butter: Melt the butter over medium heat, stirring, until it turns golden brown and smells nutty (about 5 min). Remove from heat and stir in the burnt miso. Let cool.
Prepare the batter: Preheat the oven to 175°C (350°F). Mash the bananas in a bowl. Add the brown butter miso mixture, sugars, eggs, and vanilla. Mix well.
Combine dry ingredients: In a separate bowl, mix the flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients. Stir in the yogurt until smooth.
Bake: Pour the batter into a greased or lined loaf pan. Optionally, slice a banana lengthwise and place it on top. Sprinkle with brown sugar and flaky salt.
Cook for 50-60 min, or until a toothpick comes out clean. Let cool before slicing.
