If you're looking for a light and delicious salad that doesn't involve tomatoes for once, this one’s for you.
Creamy burrata meets crisp zucchini ribbons, all brought together with a punchy parsley-cashew pesto.
It's simple, quick, and seriously addictive.

Ingredients (serves 2)
– 1 medium zucchini
– 1 fresh burrata
– 1 handful fresh parsley
– 1 small handful cashew nuts
– 1 garlic clove
– 2 tbsp grated parmesan
– 5 tbsp olive oil
– Salt, to taste
Instructions
Prep the zucchini: Slice the zucchini into thin ribbons using a peeler or mandoline. Lightly salt and drizzle with olive oil. Let it sit while you prep the pesto.
Make the pesto: Blend all pesto ingredients until smooth. Adjust the texture with more olive oil if needed, and season to taste.
Assemble the salad: Arrange the zucchini ribbons in a circle on your plate. Place the burrata in the center, then generously spoon the pesto over everything.
Finishing touches: Add a crack of pepper, a final drizzle of olive oil… and dig in.
Perfect for a quick lunch with some toasted bread or a strater for your summer table.
