This vibrant green shakshuka is a lighter, herbaceous take on the classic dish. Packed with leeks, greens, and aromatic spices, it’s a deliciously wholesome meal that comes together quickly. Whether for breakfast, brunch, or a light dinner, this dish is comforting yet refreshing. Serve it with warm bread to soak up all the flavors!

Ingredients


  • 1 leek (white and light green parts), sliced

  • 2 eggs

  • 1 handful spinach or kale, chopped

  • 1 small garlic clove, minced

  • ½ tsp cumin

  • ¼ cube vegetable broth

  • Olive oil

  • Salt & pepper

  • Fresh herbs (parsley, cilantro, or dill)





Recipe


  1. Heat olive oil in a pan over medium heat. Add leeks and crumble in the broth cube with a splash of water. Cook until soft and melting.

  2. Add garlic, cumin, and greens. Cook until wilted. Season with salt & pepper.

  3. Make two wells and crack in the eggs. Cover and cook until whites are set.

  4. Garnish with fresh herbs and serve with bread. Enjoy!
