A Fresh & Nourishing Twist on Shakshuka

This vibrant green shakshuka is a lighter, herbaceous take on the classic dish. Packed with leeks, greens, and aromatic spices, it’s a deliciously wholesome meal that comes together quickly. Whether for breakfast, brunch, or a light dinner, this dish is comforting yet refreshing. Serve it with warm bread to soak up all the flavors!

Ingredients
1 leek (white and light green parts), sliced
2 eggs
1 handful spinach or kale, chopped
1 small garlic clove, minced
½ tsp cumin
¼ cube vegetable broth
Olive oil
Salt & pepper
Fresh herbs (parsley, cilantro, or dill)
Recipe
Heat olive oil in a pan over medium heat. Add leeks and crumble in the broth cube with a splash of water. Cook until soft and melting.
Add garlic, cumin, and greens. Cook until wilted. Season with salt & pepper.
Make two wells and crack in the eggs. Cover and cook until whites are set.
Garnish with fresh herbs and serve with bread. Enjoy!
