Looking for the perfect winter salad? This dish combines crispy roasted potatoes, fresh arugula, juicy pomegranate seeds, and briny olives for a balance of flavors and textures. Topped with a creamy yogurt dressing, it’s a simple yet comforting meal that’s perfect for chilly days.

Ingredients
Salad:
1 cup arugula
¼ cup pomegranate seeds
2 small potatoes
2 tbsp olives, sliced
1 tbsp olive oil
Salt & pepper, to taste
Yogurt Dressing:
¼ cup plain yogurt
1 tsp olive oil
½ small shallot, finely chopped
Salt & pepper, to taste
Recipe
Roast the Potatoes:
Boil the potatoes until fork-tender (10-15 minutes), then drain and let them cool slightly.
Gently smash each potato with a fork or the bottom of a glass.
Drizzle with olive oil, season with salt and pepper, and roast at 400°F (200°C) for 20-25 minutes until crispy and golden.
Make the Yogurt Dressing:
In a small bowl, mix the yogurt, olive oil, and finely chopped shallot.
Season with salt and pepper to taste.
Assemble the Salad:
In a serving bowl, toss the arugula, pomegranate seeds, and sliced olives.
Add the warm, crispy potatoes.
Drizzle with the creamy yogurt dressing and gently mix.
