Lemon, garlic, and parmesan pasta

A bright, zesty, and comforting pasta dish ready in under 20 minutes. Perfect for weeknight dinners or a quick indulgent meal.

Ingredients:
250 g (9 oz) spaghetti or linguine
3 tablespoons olive oil
3 garlic cloves, finely minced
Zest and juice of 1 large lemon
60 g (1/2 cup) grated Parmesan cheese
2 tablespoons unsalted butter
Salt and freshly ground black pepper, to taste
1/4 cup fresh parsley, finely chopped (optional)
Extra Parmesan for serving
Recipe
Cook the pasta:
Bring a large pot of salted water to a boil.
Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
Prepare the garlic and lemon base:
In a large skillet, heat the olive oil over medium heat.
Add the minced garlic and sauté for 1–2 minutes, stirring constantly, until fragrant (avoid browning).
Add the lemon and butter:
Stir in the lemon zest and juice.
Add the butter and let it melt, mixing it into the sauce.
Combine the pasta and sauce:
Add the drained pasta to the skillet. Toss to coat the pasta evenly in the lemon-garlic sauce.
Gradually stir in the grated Parmesan cheese, mixing well until it melts and creates a silky coating.
If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
Season and garnish:
Season with salt and freshly ground black pepper to taste.
Sprinkle with fresh parsley if desired.
Serve:
Plate the pasta and top with extra Parmesan cheese and a drizzle of olive oil for added flavor.
