Ingredients

For the crust:

  • 250 g flour

  • 125 g cold butter

  • 1 egg

  • A pinch of salt

  • 3-4 tbsp cold water (depending on consistency)

For the filling:

  • 1/2 pumpkin

  • 150 g feta cheese

  • 20 cl heavy cream

  • 1-2 tbsp mild mustard (or strong mustard, depending on preference)

  • Olive oil

  • Salt, pepper

Recipe

  1. Prepare the crust:

    • In a large bowl, mix the flour and salt.

    • Add the butter, cut into small pieces, and work with your fingers until you get a sandy texture.

    • Add the egg and mix. If the dough is too dry, add a bit of cold water (one tablespoon at a time).

    • Shape the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes.

  2. Prepare the filling:

    • Preheat the oven to 180°C (350°F).

    • Peel and slice 1/2 pumpkin. Roast at 200°C (390°F) for 15-20 minutes, until tender.

    • In a small bowl, mix the cream with the mustard, salt, and pepper.

  3. Assemble the pie:

    • Roll out the dough on a floured surface and line a 24 cm (9-inch) pie pan.

    • Prick the bottom of the dough with a fork.

    • Spread the mustard cream mixture over the bottom of the crust.

    • Add the roasted pumpkin on top, followed by crumbled feta cheese.

    • Bake for 30-35 minutes, until the filling is golden and set.

Serve with a fresh green salad and enjoy!
