This homemade focaccia is light, airy, and infused with the earthy aroma of thyme and the briny richness of black olives. With its crispy golden crust and soft, fluffy interior, it’s the perfect bread to enjoy on its own, as a side, or for dipping in olive oil. Simple yet full of flavor, this recipe brings a taste of the Mediterranean to your kitchen.

Ingredients
250 g all-purpose or bread flour
½ packet dry yeast (about 3 g)
150 ml warm water
1 tbsp olive oil (+ extra for drizzling)
½ tsp salt
1 handful black olives, sliced
1 tsp dried or fresh thyme
Coarse sea salt (for topping)
Recipe
In a bowl, dissolve the yeast in warm water and let it sit for 5 minutes.
Add flour, olive oil, and salt, then mix until a dough forms. Knead for about 10 minutes until smooth and elastic.
Cover with a clean cloth and let the dough rise in a warm place for 1 to 1.5 hours, until doubled in size.
Preheat the oven to 200°C (400°F). Lightly oil a baking tray or line it with parchment paper.
Spread the dough out into a rectangle or circle, about 1 cm thick. Use your fingers to make small dimples in the surface.
Drizzle with olive oil, then sprinkle with thyme, black olives, and a pinch of coarse sea salt.
Bake for 20-25 minutes, until golden and crisp on the edges.
Let cool slightly before serving.
Enjoy warm with olive oil, hummus, or as a side to your favorite dishes!
