Looking for the perfect winter salad? This dish combines crispy roasted potatoes, fresh arugula, juicy pomegranate seeds, and briny olives for a balance of flavors and textures. Topped with a creamy yogurt dressing, it’s a simple yet comforting meal that’s perfect for chilly days.

Ingredients


Salad:

  • 1 cup arugula

  • ¼ cup pomegranate seeds

  • 2 small potatoes

  • 2 tbsp olives, sliced

  • 1 tbsp olive oil

  • Salt & pepper, to taste


Yogurt Dressing:

  • ¼ cup plain yogurt

  • 1 tsp olive oil

  • ½ small shallot, finely chopped

  • Salt & pepper, to taste



Recipe


Roast the Potatoes:

  1. Boil the potatoes until fork-tender (10-15 minutes), then drain and let them cool slightly.

  2. Gently smash each potato with a fork or the bottom of a glass.

  3. Drizzle with olive oil, season with salt and pepper, and roast at 400°F (200°C) for 20-25 minutes until crispy and golden.


Make the Yogurt Dressing:

  1. In a small bowl, mix the yogurt, olive oil, and finely chopped shallot.

  2. Season with salt and pepper to taste.


Assemble the Salad:

  1. In a serving bowl, toss the arugula, pomegranate seeds, and sliced olives.

  2. Add the warm, crispy potatoes.

  3. Drizzle with the creamy yogurt dressing and gently mix.
