Creamy White Bean Curry with Spinach & Feta

This comforting and flavorful white bean curry is packed with protein and nutrients, making it a perfect cozy meal. The combination of warm spices, creamy coconut milk, and fresh herbs creates a rich and satisfying dish that pairs beautifully with rice or naan.

Ingredients


  • 1 onion, finely chopped

  • 200 g fresh or frozen spinach

  • 400 g cooked and drained white beans

  • 400 g canned peeled tomatoes

  • 200 ml coconut milk (or heavy cream)

  • 1 handful fresh coriander, chopped

  • 100 g feta cheese (for topping)

  • 1 tbsp olive oil

  • 1 tsp curry powder

  • ½ tsp cumin

  • Salt & pepper, to taste



Recipe


Prepare the Veggies:

  1. Finely chop the onion.

  2. If using fresh spinach, wash and dry it. If using frozen spinach, thaw it slightly in the microwave.

  3. Heat the olive oil in a large pan or pot over medium heat.

  4. Add the chopped onion and sauté until translucent, about 5 minutes.


Toast the Spices:

  1. Stir in the curry powder, cumin, salt, and pepper.

  2. Mix well to coat the onions and release the fragrant aromas of the spices.


Add the veggies:

  1. Pour in the canned peeled tomatoes.

  2. Break them up with a wooden spoon and let them simmer for 5-7 minutes until the sauce thickens slightly.

  3. Add the drained white beans to the pan.

  4. Stir in the fresh spinach and let it wilt. If using frozen spinach, add it directly and cook until well combined.

  5. Add the coconut milk (or heavy cream) and stir well to create a creamy sauce.

  6. Let the curry simmer on low heat for 10 minutes, stirring occasionally.


Final Touch:

  1. Serve the curry in bowls and top with fresh coriander and crumbled feta cheese.

  2. Enjoy with warm rice or naan for a comforting meal!
