Ingredients
1 ripe banana
80g of flour (about 4 tablespoons)
30g of rolled oats (about 2 tablespoons)
1 packet of vanilla sugar
1/2 packet of baking powder (about 5g)
2 eggs
Recipe
In a mixing bowl, mash the banana until smooth.
Add the flour, oats, vanilla sugar, baking powder, and eggs. Stir until the batter is well combined and smooth.
Heat a non-stick pan over low heat and melt a generous knob of butter.
Pour small portions of the batter into the pan, forming pancakes. Cook for about 2 minutes on each side, until golden brown.
Serve warm with fresh market strawberries and a drizzle of maple syrup to taste.
