Fresh, Green & Fruity: My Kiwi, Avocado & Feta Salad

You know me, I love adding fruit to my salads. It brings that little sweet-tangy twist that takes things to the next level.
Today, we’re going full green with this ultra-fresh salad with SunGold kiwi, creamy avocado, and crumbly feta. It’s quick to throw together, light, and bursting with flavor.

Ingredients (serves 1)
For the salad:
– 1 ripe but firm SunGold kiwi
– 1/4 cucumber, thinly sliced
– 1/2 avocado, diced
– 3 radishes, thinly sliced
– 40g feta cheese, crumbled
– A few seeds on top (pumpkin, sunflower, sesame… optional, but nice for crunch)
For the honey-mustard dressing:
– 1 tsp Dijon mustard
– 1 tsp runny honey
– 1 tbsp lemon juice (or white balsamic vinegar)
– 1.5 tbsp olive oil
– Salt & freshly ground pepper
Instructions
In a small bowl or jar, whisk together the mustard, honey, lemon juice, and olive oil. Season with salt and pepper to taste. Set aside.
Peel and slice the kiwi into rounds or half-moons. Combine with cucumber slices, diced avocado, and radish slices in a bowl or on a plate. Crumble over the feta and sprinkle with seeds if using.
Drizzle the honey-mustard dressing over the salad just before serving. You can toss it all together or keep it artfully layered—your call.
