Grilled Pita with Yogurt, Soft-Boiled Eggs & Spinach

Some days, all you want is a plate that feels like a warm hug—simple, satisfying, and nourishing. This dish is exactly that. Soft-boiled eggs, creamy yogurt, fresh greens, and golden grilled pita... it's the kind of meal you’ll want to come back to again and again.


Balanced, quick to make, and absolutely delicious.

Ingredients (serves 1)


For the pita:

– 4 tbsp all-purpose flour

– 1/2 tsp baking powder

– 2 tbsp plain yogurt (or fromage blanc)

– A splash of water, if needed, to adjust the dough texture


To serve:

– 2 tbsp plain yogurt (Greek or plant-based)

– 2 eggs

– A handful of baby spinach

– 1 tsp pesto (homemade or store-bought)

– Olive oil, salt, pepper




Instructions


  1. In a bowl, mix the flour and baking powder. Add the yogurt and stir to form a soft dough, adding a little water if it's too dry. Divide into two balls, roll them out into flat circles, and grill them in a hot pan (no oil needed) for a few minutes on each side until puffed and golden.


  2. Bring a small pot of water to a boil. Gently lower in the eggs and cook for 6 minutes for a perfectly jammy yolk. Transfer immediately to cold water, then peel carefully.


  3. Spoon the yogurt onto a plate, top with the soft-boiled eggs (cut them open for that runny yolk moment!), a handful of baby spinach, and a little spoon of pesto. Serve the warm grilled pitas on the side.


  4. Drizzle everything with good olive oil, add a pinch of salt and some freshly ground pepper.


A simple dish, but one that always hits the spot. Perfect for a quick lunch or a lazy dinner. Comfort food doesn't have to be heavy—it just has to make you feel good. 💛
