This Cake à la Noisette is a moist, nutty, and deliciously simple French-style hazelnut cake. It’s naturally rich in flavor with ground hazelnuts, making it a perfect treat for breakfast, tea time, or dessert. You can enjoy it plain or with a dusting of powdered sugar for an elegant touch.

Ingredients

150g ground hazelnuts
100g all-purpose flour (or almond flour for gluten-free)
100g sugar (or coconut sugar for a healthier option)
3 eggs
80g (1/3 cup) butter, melted (or coconut oil for dairy-free)
1/2 tsp baking powder
1/2 tsp vanilla extract
1/4 cup milk (or almond/oat milk for dairy-free)
Pinch of salt
Toppings :
melted chocolate
chopped hazelnuts
Recipe
Preheat the Oven:
Preheat your oven to 180°C (350°F). Grease and flour a cake mold or line it with parchment paper.
Prepare the Batter:
In a large bowl, whisk the eggs and sugar until light and slightly frothy.
Add the melted butter, vanilla extract, and milk. Mix well.
In a separate bowl, combine ground hazelnuts, flour, baking powder, and salt.
Mix & Bake:
Gradually add the dry ingredients to the wet ingredients, stirring until you get a smooth batter.
Pour the batter into the prepared cake pan and spread evenly.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve:
Let the cake cool for 10 minutes in the pan before transferring it to a wire rack.
Dust with powdered sugar or serve with a drizzle of honey and chopped hazelnuts.
