Fluffy, vibrant, and packed with the earthy goodness of matcha, these pancakes are perfect for breakfast or brunch. Pair them with your favorite toppings for an irresistible treat!

Ingredients
1 cup (120 g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon matcha powder (culinary grade)
2 tablespoons sugar (or sweetener of choice)
1/4 teaspoon salt
3/4 cup (180 ml) milk (or plant-based alternative)
1 large egg
1 teaspoon vanilla extract
2 tablespoons melted butter (plus extra for greasing the pan)
Recipe
Prepare the dry ingredients:
In a large bowl, whisk together the flour, baking powder, baking soda, matcha powder, sugar, and salt.
Mix the wet ingredients:
In a separate bowl, whisk the milk, egg, vanilla extract, and melted butter until well combined.
Combine the mixtures:
Gradually pour the wet ingredients into the dry ingredients, gently whisking until just combined. Be careful not to overmix; a few lumps are okay!
Heat the pan:
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter.
Cook the pancakes:
Pour about 1/4 cup of batter onto the pan for each pancake. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1–2 minutes until golden and cooked through. Repeat with the remaining batter.
Serve:
Stack the pancakes on a plate and top with your favorite additions.
