Serves: 6-8
Prep Time: 15 minutes
Cook Time: 45-50 minutes

Ingredients
For the crust:
250 g flour
125 g cold butter
1 egg
A pinch of salt
3-4 tbsp cold water (depending on consistency)
For the filling:
1/2 pumpkin
150 g feta cheese
20 cl heavy cream
1-2 tbsp mild mustard (or strong mustard, depending on preference)
Olive oil
Salt, pepper
Recipe
Prepare the crust:
In a large bowl, mix the flour and salt.
Add the butter, cut into small pieces, and work with your fingers until you get a sandy texture.
Add the egg and mix. If the dough is too dry, add a bit of cold water (one tablespoon at a time).
Shape the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes.
Prepare the filling:
Preheat the oven to 180°C (350°F).
Peel and slice 1/2 pumpkin. Roast at 200°C (390°F) for 15-20 minutes, until tender.
In a small bowl, mix the cream with the mustard, salt, and pepper.
Assemble the pie:
Roll out the dough on a floured surface and line a 24 cm (9-inch) pie pan.
Prick the bottom of the dough with a fork.
Spread the mustard cream mixture over the bottom of the crust.
Add the roasted pumpkin on top, followed by crumbled feta cheese.
Bake for 30-35 minutes, until the filling is golden and set.
Serve with a fresh green salad and enjoy!
