Ingredients
Butternut squash (or any type of pumpkin), cut into cubes
Olive oil
Herbes de Provence
A drizzle of agave syrup
Mushrooms
Butter
4 Eggs
1 tablespoon of Greek yogurt or heavy cream
Ricotta cheese
Zest of one lime
Olive oil
4 slices of rye bread
Optional toppings (your choice!)

Preheat your oven to 200°C (390°F). Toss the butternut squash cubes with olive oil, a pinch of salt, Herbes de Provence, and a drizzle of agave syrup. Spread them on a baking sheet and roast for about 25 minutes, or until tender and slightly caramelized.
In a pan over low heat, cook the mushrooms in a bit of butter until tender. In the same pan, scramble the eggs gently, stirring constantly over low heat. Add a tablespoon of Greek yogurt or heavy cream to the eggs for extra creaminess.
Prepare the Ricotta Spread:In a small bowl, whisk the ricotta with a touch of olive oil and the zest of a lime until smooth and creamy.
Toast the Bread until golden and crispy.
Spread the whipped ricotta over the toasted rye bread. Layer on the roasted pumpkin cubes, scrambled eggs, and mushrooms. Add any optional toppings you like for extra flavor and texture.
