Ingredients


  • 2 ripe persimmons (Fuyu variety works best)

  • 2 tablespoons of honey (or maple syrup for a vegan option)

  • 1 tablespoon of melted butter (or coconut oil for a vegan option)

  • A pinch of nutmeg (optional)

  • 1/4 cup chopped nuts (e.g., walnuts, pecans, or almonds)

  • 2 small burrata or 1 big (for serving)




Recipe


  1. Preheat the oven:Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

  2. Prepare the persimmons:

    • Wash the persimmons and cut them into halves (leave the skin on).

    • Place them on the prepared baking sheet, cut side up.

  3. Mix the glaze:In a small bowl, whisk together the honey & melted butter.

  4. Coat the persimmons:

    • Brush the cut side of each persimmon generously with the honey glaze.

    • Sprinkle the chopped nuts over the top.

  5. Roast:Roast the persimmons in the preheated oven for 20–25 minutes, or until they are tender and slightly caramelized.

  6. Serve:

    • Serve warm with burrata for a creamy contrast.

    • Drizzle extra honey over the top if desired.
