This Fennel, Burrata & Orange Salad is a perfect balance of crisp, creamy, and juicy textures. The sweetness of oranges pairs beautifully with the anise-like crunch of fennel, while burrata adds a luxurious creaminess. Topped with fresh radish slices, pomegranate seeds, and fresh parsley, this dish is light yet indulgent—ideal as a starter or side dish.

Ingredients
1 fennel bulb, thinly sliced
1 large orange, peeled and sliced into rounds (or segmented)
1 burrata ball, torn into pieces
3 radishes, thinly sliced
1/4 cup pomegranate seeds
2 tbsp fresh parsley, chopped
For the Dressing:
3 tbsp extra virgin olive oil
1 tbsp fresh orange juice
1 tbsp lemon juice
1 tsp honey (or maple syrup for vegan)
Salt and black pepper, to taste
Recipe
Prepare the Ingredients:
Thinly slice the fennel using a sharp knife or mandoline.
Peel the orange and slice it into rounds or separate it into segments.
Slice the radishes as thinly as possible.
Make the Dressing:
In a small bowl, whisk together olive oil, orange juice, lemon juice, honey, salt, and black pepper.
Assemble the Salad:
Arrange the fennel slices on a large plate.
Layer the orange slices, radishes, and torn burrata on top.
Sprinkle with pomegranate seeds and fresh parsley.
Dress & Serve:
Drizzle the dressing over the salad.
